Welcome!  Care for a Zucchini Pizza Mini?  I thought an appetizer would be a good way to kick off this blog party.

Easy, quick, and healthy compared to the pizzeria version, especially if you’re in the habit of late night pizza eating.  Okay, I know, I know, I won’t compare, but this snack as an occasional substitute is definitely a Maximize Health, Maximize Life option.

Zucchini Pizza Minis

Ingredients:

2 small zucchinis (made a baking sheet full)

1 tablespoon olive oil

1/4  cup pasta or pizza sauce

1/3 cup shredded mozzarella

1-2 tablespoons parmesan cheese  (opt.)

Italian Seasoning, oregano, basil (fresh or dried) and/or any other preferred spices

Assembly:

Cut zucchini into bite-size rounds, about 1/2″ thick. (I use organic because zucchini is often genetically modified.)

Set oven on Broil

Heat olive oil in skillet over medium heat.  Cook zucchini in batches, 1 -2 minutes per side.  Transfer to baking…
